Making old the new ‘new’

IF YOU CAME ACROSS A BEAUTIFUL BUILDING BEING ALLOWED TO CRUMBLE GRACEFULLY INTO THE GROUND, CHANCES ARE YOU’D BE OUTRAGED. BEFORE YOU KNOW IT THERE’D BE A SUPPORT GROUP, NEWSPAPER ARTICLES AND A RICKETY THERMOMETER-STYLE FUNDRAISING CHART PROPPED UP PROMINENTLY.

But the idea of protecting foods at risk of becoming ‘extinct’ in our society? Well it’s happening and gathering momentum; Slow Food UK is working to protect and preserve 68 forgotten foods in danger of disappearing from our shops, restaurants and cookery books. These include obscure foods such as: hopshoots, Northdown clawnuts, Huntingdon fidget pie, Goosnargh cake, medlars and Walthamstow yellow cress. 

Backed by our sister company, Restaurant Associates (who serve some of the rarities), Slow Food UK wants to make sure we remember our food heritage, by creating a recipe bank and supporting small producers.

It’s creating an interesting twist on the usual ‘protect our heritage’ situation — preservation through bringing the at-risk produce back into the mainstream. By sharing the specialities across a wider audience, Slow Food UK hope to anchor the rarities identified into today’s palate, recognising the value of local specialities and yet working to protect them by making them both nationally available and popular. 

At Eurest we understand what a difference having variety in your menu can make to your overall taste experience. So we prioritise sharing new, exciting tastes across all our workplace restaurants and focus on sourcing and delivering fresh and delicious eating occasions. This can involve taking dishes that originate as local specialities and sharing them with the whole of the UK via the Source, our recipe bank; we’re always open to fresh ideas and additions.

We aim to find the flavours that matter to you — old or new, from your locality or from more international cuisines — and draw them into our offering. Bon appétit.
